HAPPY THANKSGIVING!!
In the spirit of the holiday, I wanted to share with you one of my favorite recipes, Butternut Squash Soup. This dish is filled with sweetness, a wonderful aroma, and vibrant colors that are perfect for the dinner table. Enjoy the dish and all the celebrations it brings with it.
1 medium onion, minced
****I also likes to either sprinkle spicy roasted pumpkin seeds on top or serve on the side.****

1 medium onion, minced2 pounds prepared peeled, cubed butternut squash
6 cups water
1 canned coconut milk
1/2 cup white wine
2 garlic cloves chopped or 2 frozen crushed garlic cubes
1 tablespoon fresh grated ginger or 1 teaspoon of ginger powder
1 teaspoon curry powder
1/4 teaspoon dried thyme
1/4 teaspoon dried thyme
1 teaspoon Kosher salt
Place all ingredients in a 6 quart stockpot, cover and bring to boil. Reduce to simmer and cook covered for 30 to 40 minutes until squash is soft. Use a potato masher or fork to mash the squash and continue to cook for 10 minutes
Ladle in bowls and serve.
